Xylan non stick coatings are compliant with USDA and FDA regulations, including 21 CFR 175.300, for contact with food. Xylan is a highly complex polysaccharide found in plant cell walls and some algae. The most common use for Xylan is in non stick coatings and medically implanted devices. The cook surfaces are made to be chip resistant, however should you ingest a chip of Xylan it will pass through the digestive system and will not be absorbed, it is very safe.
